The primary objective of this study was to investigate the survival rate three species encapsulated bacteria (Propionibacterium acidipropionicici, Propionibacterium freudenreichii, and thoenii) in model solutions designed simulate acidity levels found within human gastrointestinal tract. capsules were prepared by extrusion from gelatin sodium alginate a 1:1 ratio on laboratory encapsulator. use provide optimum characteristics suitable for encapsulation live bacteria. Three strains asidirgorionici, thoenii subjected vitro assay evaluate their probiotic potential. final cell P. freudenreichii 105 CFU/mL, indicating that is sensitive acidic medium. viability probiotics studied medium simulating It alginate–gelatin could protection gastric acid lead high viable released intestine.
